Microwave Vegan Hot Cocoa
"No, thank you" -said no one ever to a good cup of hot cocoa. Here's my quick, easy, and healthy microwave hot cocoa recipe that is perfect for these chilly fall nights.

- 2-3 tsp coconut nectar or maple syrup
- 1 tsp unsweetened cocoa or cacao powder
- 1 1/4 10 oz cup any milk of your preference (organic soy, almond, dairy, etc.)
- 1/8 teaspoon vanilla extract optional
Microwave the milk in a microwave-safe mug on High for 2 minutes and 40 seconds (yes, I'm that precise with my hot cocoa).*
Meanwhile, in a small bowl, stir the coconut nectar and cocoa to make a smooth paste.** You can also add vanilla extract to enhance the flavor.
Pour this mixture into the mug of hot milk. Wash the bowl immediately of the chocolate syrupy mixture while it's still easily washable!
*You will have to experiment to see what works best with your mug, quantity of milk, and microwave.
**You can also mix the cocoa paste in a mug and transfer the hot milk to the paste.
