Yakhni Pulao

Ingredients

Stock (Yakhni)

Chicken Pulao

Garnish

To a pot with water, add chicken, onion, whole spices & salt.

STEP 1

Bring to a boil, removing any scum that rises to the surface. Cover & cook.

STEP 2

Remove meat. Strain broth and measure.

STEP 3

Wash and soak rice.

STEP 4

Heat oil & ghee in a pot. Add onions. Sauté until golden brown.

STEP 5

Add whole spices, garlic, ginger & chicken.

STEP 6

Add green chili & yogurt. Gently sauté until oil separates.

STEP 7

Add salt & reserved stock. Bring to a boil.

STEP 8

Add rice. Bring to a boil & simmer. Cover & steam.

STEP 9

Sprinkle garam masala, black pepper, cilantro & mint on top.

STEP 10
