Pakistani Zucchini Curry
"This recipe is a WINNER!"
Peel and slice zucchini.
Heat oil in pan. Add onions and sauté until lightly golden.
Add garlic, ginger and cumin seeds. Sauté.
Add tomato, ground spices, zucchini & water.
Cover & cook.
Break up zucchini with a wooden spoon. Add green chili & turmeric. Sauté.
Cover & simmer on low heat. Once water has dried garnish with cilantro.
Garnish with a squeeze of lemon & some more cilantro. Enjoy with roti!
