Goat/Lamb Pulao

Ingredients

Stock (Yakhni)

Mutton Pulao

To a pot with water, add mutton, onion, whole spices & salt.

STEP 1

Bring to a boil, removing any scum that rises to the surface. Cover & cook.

STEP 2

Remove meat. Strain broth and measure.

STEP 3

Wash and soak rice.

STEP 4

Heat oil & ghee in a pot. Add onions. Sauté until golden brown. Deglaze with water

STEP 5

Add whole spices, garlic & ginger.

STEP 6

Add meat, salt, green chili & yogurt. Gently sauté until oil separates. Add stock & bring to a boil.

STEP 7

Add rice. Bring to a boil & simmer. Cover & steam.

STEP 8

Garnish with cilantro & mint. Mix with a rice paddle & serve.
