Aloo Baingan

Eggplant & Potato Curry

Ingredients

Dice eggplant into 1 inch cubes.

STEP 1

Pan-fry eggplant until golden brown. Set aside.

STEP 2

Heat oil in pan. Add cumin seeds & onion. Sauté until lightly golden.

STEP 3

Deglaze with water. Add garlic & ginger. Sauté. 

STEP 4

Add tomatoes, green chili, ground spices & salt. Cook.

STEP 5

Add potatoes & water. Cover & cook.

STEP 6

Stir in pan-fried eggplant. Cover & cook.

STEP 7

Garnish with cilantro, garam masala & lemon juice.

STEP 8

Serve with naan & yogurt!
