Who loves hot cocoa on chilly nights? Me!
Who is way too lazy and tired at the end of the day to make it in a saucepan? Me! Me!
Saucepans are for chai anyway! 😉
This is my go-to drink for these chilly fall nights. Instead of sugar, it uses coconut nectar, which is a nutritious sweetener derived from the sap of the coconut tree. It’s also low glycemic, which means you won’t get that sugar rush late at night.
There are two reasons this method of preparing hot cocoa works:
- The cocao paste is added afterward. If you add the paste before microwaving, it will create a bitterness and will not taste as good as if you add it afterward. Don’t ask me why, just trust me on this one. 😛
- The paste breaks down the cacao powder so your “me moment” isn’t ruined with powder chunks in your drink.

Microwave Vegan Hot Cocoa
"No, thank you" -said no one ever to a good cup of hot cocoa. Here's my quick, easy, and healthy microwave hot cocoa recipe that is perfect for these chilly fall nights.
Ingredients
- 2-3 tsp coconut nectar or maple syrup
- 1 tsp unsweetened cocoa or cacao powder
- 1 1/4 10 oz cup any milk of your preference (organic soy, almond, dairy, etc.)
- 1/8 teaspoon vanilla extract optional
Instructions
- Microwave the milk in a microwave-safe mug on High for 2 minutes and 40 seconds (yes, I'm that precise with my hot cocoa).*
- Meanwhile, in a small bowl, stir the coconut nectar and cocoa to make a smooth paste.** You can also add vanilla extract to enhance the flavor.
- Pour this mixture into the mug of hot milk. Wash the bowl immediately of the chocolate syrupy mixture while it's still easily washable!
Notes
*You will have to experiment to see what works best with your mug, quantity of milk, and microwave.
**You can also mix the cocoa paste in a mug and transfer the hot milk to the paste.
