3 Ingredient Avocado Pudding
There’s a triumphant joy we feel when our baby eats well, and it’s magnified when she’s eating something highly nutritious.
This creamy avocado pudding will give you that joy.
I don’t usually post baby food recipes, but I felt this one had to be shared. It only has three ingredients, takes very little prep time and your baby will love it. I say this because my usually-picky toddler has yet to turn this down. Every time I serve it to her, I wonder why I don’t make it more often!
For proper brain development and growth, babies and toddlers need an abundant amount of healthy fats. Avocados are not only an excellent source of good fats, they are high in fiber and provide antioxidants, folate, and other baby-essential nutrients.
For sweetness, (surprise, surprise????) I added dates. Dates are full of fiber, essential vitamins and minerals. While we often hear of prunes being high in iron, dates actually rival prunes in their iron content. Dates are also rich in copper, another essential mineral that helps transport iron to the body.
When mixed with a little (always organic!) soymilk, these nutrient-dense fruits produce this delightful, creamy pudding. Plus, you won’t mind finishing the leftovers! You can eat it as is, add in some melted chocolate for a chocolate avocado pudding, or even squeeze a little lime in and make it avocado lime pudding.
Creamy Blender Avocado Pudding - Baby/Toddler/Grown-up Friendly
- 1 small* organic avocado 140 grams, peeled and pitted
- 1/4 cup organic unsweetened soy milk or other milk of choice
- 2 medjool dates pitted and broken into a couple pieces
- 3 ice cubes
- Add all the ingredients to a baby food blender or regular** high-speed blender. Blend until creamy, stopping to push down the ice and dates with a blender tamper or spatula, if necessary. Serve immediately.
